In our two hour Miso Making Workshop you'll learn how to make this widely used Japanese seasoning for yourself, making the fermenting process fun and feel familiar to you. This workshop will be run alongside our very good friend Robin from Koji Kitchen. Koji maker Robin is one of the few koji makers in the UK, lovingly making small batched and teaching people about the world of koji and miso.
Join Robin to learn how to make your own miso to take home with you, the ins and outs of koji making and its magic and get to taste some seriously unique and fab ferments. This will be a hands on making miso masterclass with a jar of miso to take home with you. We will make miso together, chat koji, enzymes, mould, textures and tastes of miso and explore using different beans, peas and veggies to make your miso with.
We will enjoy a tasting session of miso, koji based amazakes, shio kojis, pickles and lots of other ferments. This is a one off masterclass, we will have fun and you can use your self made miso on everything you eat!
Each guest will have a space on a table, tools and ingredients all needed for the preparation of making miso. You will take away your own custom made jar of miso with the knowledge and skills to ferment at home.
Please wear T-shirt or short sleeved shirt so as not to get food on your clothes. Aprons will be provided.
