  • 4 large flour tortillas
  • 240 g grated cheese
  • 240g Curtido, drained and roughly chopped (bonus points for keeping the brine - mix with sour cream or mayo for a tangy sauce!)
  • 2 spring onions, thinly sliced
  • 1 tablespoon neutral oil
  • Optional toppings: sour cream, chopped coriander, sliced jalapeños


  1. Heat a large non-stick skillet or pan over medium heat. Place one tortilla in the skillet and sprinkle half of the grated cheese evenly over the tortilla.

  2. Add a generous amount of curtido on top of the cheese, spreading it out to cover the entire tortilla. Sprinkle some green onions over the curtido .

  3. Place another tortilla on top to form a quesadilla. Press it down gently with a spatula.

  4. Drizzle half of the oil evenly over the top tortilla. Cook for 2-3 minutes, or until the bottom tortilla is golden brown and crispy.

  5. Carefully flip the quesadilla using a spatula and cook for an additional 2-3 minutes on the other side, until the cheese is melted and the tortilla is crispy.

  6. Remove the quesadilla from the skillet and transfer it to a cutting board. Let it cool for a minute, then slice it into wedges.

  7. Repeat the process with the remaining tortillas and ingredients to make more Curtido quesadillas.

  8. Serve the Curtido quesadillas warm, garnished with your favourite toppings like sour cream, chopped coriander, and sliced jalapeños.
